I love a simple avocado toast but recently started making this one for lunch and it is now my daily go to! It is simple and easy and a much healthier alternative than a typical sandwich! In the summer, I add some fresh basil to the toast as well. Enjoy!
SMASHED AVOCADO CAPRESE TOAST
1/2 ripe avocado, smashed
4 slices buffalo mozzarella
5-6 cherry tomatoes, halved
2 slices of your bread of choice, *I use Rosemary Olive Oil bread from Wegman's
Sea salt , to taste
Toast your bread slices. While the bread is toasting, smash your avocado in a small bowl and add some sea salt to taste. Spread avocado on toasted slices of bread. Top each slice with 2 slices of mozzarella cheese each and the halved cherry tomatoes. Drizzle with balsamic glaze. Enjoy this yummy and healthy lunch!
