My mom is up from Tennessee this week and no visit is complete with Southern Shrimp & Grits for dinner! I'm sharing our family recipe today! Enjoy!!
SOUTHERN SHRIMP & GRITS
1 tablespoon olive oil
1 pound of uncooked shrimp, peeled & deveined
1 can of fire roasted diced tomatoes, drained
1 cup quick cooking grits (not instant)
shredded cheddar cheese (optional)
1. In small pot, cook grits according to package directions.
2. In a large saucepan, heat olive oil and saute shrimp, about 2-3 minutes.
3. Add can of fire roasted tomatoes and bring to slow boil, heat until shrimp is cooked.
4. Once grits are cooked, remove from pot and serve with shredded cheese.
*You can serve the shrimp on top of the grits or on the side*
Makes 4 servings
