Summertime is here and weekend barbeques are in full swing! This is one of my go to salads in the summer (a recipe passed down by my MIL) that goes perfectly with grilled hamburgers or chicken. A great, easy salad that you can make a few hours ahead and then serve! Enjoy!! xoxo
MARINATED BEAN SALAD
16 ounce can Great Northern beans, rinsed and drained
15 ounce can black beans, rinsed and drained
15 ounce can kidney beans, rinsed and drained
8.75 ounce can whole kernel corn, rinsed and drained
4 green onions, sliced
2 carrots, chopped
1/2 cup lemon juice from concentrate
1/3 cup olive oil
1 garlic clove, pressed
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon chili powder
1. Stir first 6 ingredients together in a large bowl.
2. Stir together lemon juice and next 5 ingredients; add to bean mixture, tossing to coat.
3. Cover bowl and chill in fridge for at least 2 hours or up to 4 days.
Yield: 5.5 cups
