Every Christmas, for as long as I can remember, my grandmother made pizzelles. Pizzelles are an Italian waffle-like cookie and yes, you do need a pizzelle maker to make them. When my grandmother passed away, I was thankfully passed down hers. I love bringing out the pizzelle maker every season and whipping up a batch of these cookies. They bring back so many memories for me cooking with my grandmother in her kitchen! Isn't is funny how food can do that?
I have kept her hand written recipe for years and will cherish it forever....
Here is my grandmother's Pizzelle recipe. The original Italian version calls for anise extract which you can certainly do. My kids don't enjoy the licorice taste so we omit it. Enjoy and Happy Holidays!
6 eggs, beaten well
1 1/2 cups sugar
1 1/2 cups 3 sticks melted butter
4 cups sifted flour
2 teaspoon baking powder
4 teaspoon vanilla
2 teaspoon anise extract (optional)
1. Beat eggs, sugar and butter.
2. Sift flour and baking powder and add to batter.
3. Stir in vanilla.
4. Add more flour to make the batter stiff.
5. Heat pizzelle maker and follow directions on box for cooking time.
**This recipe makes 100 pizzelles**
